Halal chicken shawarma rice bowls

Fragrant halal-style chicken shawarma served with rice, cucumber salad and yogurt sauce.

Serves: 4 people

Preparation time: 180 min

Ingredients

  • Chicken thighs – 700 g
  • Basmati rice – 300 g
  • Greek yogurt – 200 g
  • Cucumber – 1
  • Tomatoes – 2
  • Red onion – 1/2
  • Garlic – 3 cloves
  • Lemon – 1
  • Ground cumin – 1 tsp
  • Ground coriander – 1 tsp
  • Paprika powder – 1 tsp
  • Olive oil – 2 tbsp

Method

Marinate the chicken with oil, spices, garlic and lemon. Roast or grill until cooked and browned.
Cook the rice. Mix yogurt with a little lemon and cucumber.
Serve the sliced chicken over rice with tomato, onion and the yogurt sauce.
