Hainanese chicken rice is all about tender chicken, fragrant rice and simple accompaniments that create surprising depth of flavour.
What makes Hainanese chicken rice special?
The strength of this dish lies in its simplicity. The rice is flavoured with chicken and aromatics, while the chicken stays tender and is usually served with fresh or spicy sauces.

Ingredients
- jasmine rice – 1 1/2 cups
- whole chicken or chicken thighs – 2 lb
- ginger, sliced – 2 inches
- garlic, minced – 4 cloves
- chicken stock – 4 cups
- cucumber, sliced – 1/2
- green onion – 2
- soy sauce – 2 tbsp
- sesame oil – 1 tbsp
- vegetable oil – 1 tbsp
- salt – 1 1/2 tsp
Method
1. Poach the chicken gently with ginger and part of the garlic until cooked through.
2. Remove the chicken and reserve the cooking broth.
3. Fry the remaining garlic in oil, add the rice and cook briefly.
4. Add stock from the poaching broth and cook the rice until fluffy.
5. Slice the chicken and serve with rice, cucumber, green onion and soy sauce.
