Green shakshuka is a fresh, spoonable dinner full of herbs, vegetables and warmth. It feels nourishing and modern at the same time, with the coconut yogurt bringing a cool contrast to the spiced green base.
Serves: 4 people
Ingredients
- olive oil – 2 tbsp
- onion – 1, chopped
- garlic – 2 cloves, chopped
- ground cumin – 1 tsp
- zucchini – 1, diced
- peas – 250 g
- spinach – 200 g
- vegetable stock – 150 ml
- coconut yogurt – 150 g
- parsley – 2 tbsp, chopped
- chili flakes – to taste
- salt – to taste
Method
STEP 1
Heat the olive oil and soften the onion and garlic with the cumin.
STEP 2
Add the zucchini and peas and cook for a few minutes until they start to soften.
STEP 3
Add the spinach and stock and let everything cook down into a spoonable green pan sauce.
STEP 4
Season well and simmer briefly until the vegetables are tender.
STEP 5
Serve topped with coconut yogurt, parsley and chili flakes.
