A fresh Greek classic with cucumber, tomatoes, olives, red onion and feta. No cooking needed, but the seasoning matters.
Serves: 2 people

Ingredients
- cucumber – 1
- tomatoes – 4 ripe
- red onion – 1 small
- feta – 150 g
- Kalamata olives – handful
- olive oil – 3 tbsp
- red wine vinegar – 1 tbsp
- dried oregano – 1 tsp
Method
STEP 1
Cut the cucumber into chunks, cut the tomatoes into wedges and slice the red onion very thinly so it mixes through the salad instead of dominating it.
STEP 2
Put the vegetables in a large bowl with the olives, oregano and feta. Drizzle over the olive oil, season lightly, then toss gently so the feta stays in generous pieces. Serve immediately, preferably with bread to catch the juices.
