Warm goat cheese, crisp salad, walnuts and a sweet-sharp dressing make this a friendly bistro starter with plenty of texture.
Serves: 4 people

Ingredients
- Mixed salad leaves – 150 g
- Soft goat cheese – 200 g
- Walnuts – 60 g
- Cherry tomatoes – 150 g
- Cucumber – 0.5
- Bacon lardons – 100 g
- Olive oil – 3 tbsp
- Balsamic vinegar – 1 tbsp
- Honey – 1 tbsp
- Salt and black pepper – to taste
Method
1. Bake or grill the goat cheese briefly until just warm and soft.
2. Fry the bacon until crisp and let it drain on kitchen paper.
3. Whisk the olive oil, balsamic vinegar and honey into a dressing. Toss the salad leaves, tomatoes and cucumber lightly with it.
4. Divide the salad over plates and finish with the warm goat cheese, walnuts and bacon for a good mix of soft, crisp and sweet.
