This goat Cheese Salad with Cranberries, Seeds and Bacon combines fresh salad leaves with cranberries, seeds and bacon. It feels light on the plate, but has enough flavour and substance for lunch or a simple evening meal.

Goat cheese adds creaminess and a gentle tang to a salad. When it is balanced with something sweet, something crisp and a fresh dressing, the result feels complete rather than like a simple bowl of greens.

Ingredients

  • Goat cheese medallions – 6
  • Bacon lardons – 100 g
  • Mixed salad leaves – 150 g
  • Dried cranberries – 30 g
  • Sunflower and pumpkin seeds – 3 tbsp
  • Cucumber ribbons – 1/2 cucumber
  • Olive oil – 2 tbsp
  • White balsamic vinegar – 1 tbsp
  • Runny honey – 1 tsp
  • Black pepper – to taste

Method

STAP 1
Toast the seeds in a dry pan until fragrant and set aside.

STAP 2
Cook the bacon until crisp and warm the goat cheese in the oven.

STAP 3
Arrange salad leaves and cucumber ribbons on a platter and scatter over the cranberries.

STAP 4
Add the bacon and warm goat cheese.

STAP 5
Whisk olive oil, white balsamic and honey together, spoon over the salad and finish with the toasted seeds and black pepper.
