Goat Cheese Salad with Apple, Bacon and Honey Mustard Dressing

A fresh salad with warm goat cheese, crisp apple and smoky bacon, tied together with a creamy honey-mustard dressing.

Serves: 2 people

Preparation time: 12 min

Ingredients

  • Goat cheese medallions – 6
  • Smoked bacon lardons – 125 g
  • Pink Lady apple, in matchsticks – 1
  • Lamb's lettuce – 125 g
  • Wholegrain mustard – 1 tsp
  • Mayonnaise – 1 tbsp
  • Runny honey – 1 tbsp
  • Yoghurt – 1 tbsp
  • Apple cider vinegar – 1 tsp
  • Black pepper – to taste

Method

STAP 1
Cook the bacon lardons until crisp and keep warm.

STAP 2
Stir mustard, mayonnaise, honey, yoghurt and vinegar into a creamy dressing.

STAP 3
Warm the goat cheese briefly in the oven or under the grill.

STAP 4
Arrange the lamb’s lettuce and apple on plates, then add the bacon.

STAP 5
Top with warm goat cheese, spoon over the dressing and finish with black pepper.
