Crunchy crostini with tangy goat cheese, sweet beetroot and a drizzle of honey make a colourful amuse with a perfect sweet-savory balance.
Serves: 6 people

Ingredients
- Baguette – 1 small
- Cooked beetroot – 2
- Goat cheese – 120 g
- Honey – 1 tbsp
- Olive oil – 2 tbsp
- Thyme – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Slice the baguette into thin pieces and brush both sides lightly with olive oil.
STEP 2
Toast the bread in a hot oven or dry grill pan until the slices are crisp and lightly golden.
STEP 3
Slice the beetroot into small thin pieces so it fits neatly on the crostini.
STEP 4
Spread each toast with goat cheese, then top with a slice or two of beetroot.
STEP 5
Finish with a little honey, thyme, black pepper and a tiny pinch of salt before serving.
