A rich sweet potato soup with peanut butter, tomato and warming spices for a satisfying gluten-free meal.

Ingredients
- Olive oil – 1 tbsp
- Onion – 1
- Garlic cloves – 2
- Sweet potatoes – 700 g
- Tomato purée – 1 tbsp
- Vegetable stock – 900 ml
- Peanut butter – 100 g
- Ground cumin – 1 tsp
- Paprika powder – 1 tsp
- Lime juice – 1 tbsp
- Salt – to taste
Method
STEP 1 Cook the onion and garlic in olive oil, then add the sweet potato, tomato purée and spices.
STEP 2 Add the stock and simmer until the sweet potato is tender.
STEP 3 Blend smooth and whisk in the peanut butter.
STEP 4 Finish with lime juice and salt and serve hot.
