Gluten-free lentil feta cucumber salad

A filling lentil salad with cucumber, feta and herbs that works as lunch or a side dish.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • Cooked lentils – 400 g
  • Cucumber – 1
  • Red onion – 1/2
  • Feta – 150 g
  • Parsley – 15 g
  • Mint – 10 g
  • Olive oil – 3 tbsp
  • Lemon juice – 2 tbsp
  • Ground cumin – 1/2 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1 Combine the lentils with diced cucumber, onion, feta and herbs.
STEP 2 Whisk olive oil, lemon juice, cumin, salt and pepper.
STEP 3 Pour over the salad and toss well.
STEP 4 Chill for 15 minutes before serving.
