A protein-rich chicken salad with avocado, crunchy greens and a zesty lime dressing.

Ingredients
- Cooked chicken breast – 350 g
- Avocados – 2
- Romaine lettuce – 2 hearts
- Cherry tomatoes – 200 g
- Sweetcorn – 150 g
- Red onion – 1/2
- Olive oil – 3 tbsp
- Lime juice – 2 tbsp
- Honey – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1 Slice the chicken, avocado and vegetables.
STEP 2 Arrange everything on a large platter or in a bowl.
STEP 3 Whisk olive oil, lime juice, honey, salt and pepper.
STEP 4 Dress the salad just before serving.
