A Ghent-style beef stew with dark beer, onions and bread spread with mustard.
Serves: 4 people
Preparation time: 120 min
Ingredients
- stewing beef – 2 lb
- onions – 3
- butter – 3 tbsp
- dark beer – 12 fl oz
- beef stock – 1 cup
- country bread – 2 slices
- mustard – 2 tbsp
- apple syrup – 1 tbsp
- bay leaves – 2
- thyme – 2 sprigs
- salt – to taste
- black pepper – to taste
Method
1. Brown the beef in butter in batches.
2. Cook the onions until soft and return the beef to the pot.
3. Add the beer, stock, apple syrup, bay and thyme.
4. Spread the bread with mustard and lay it on top of the stew. Cover and simmer gently for 2 hours.
5. Stir the bread into the sauce once it has dissolved and season with salt and pepper.
6. Serve hot with fries or potatoes.
