German winter cabbage soup with beef and caraway

Cabbage soup is a true cold-weather classic in Germany. In this version, ground beef, potato and caraway create a hearty meal soup with a deeply savory winter flavor.

Serves: 4 people

Ingredients

  • olive oil – 1 tbsp
  • ground beef – 10 oz
  • onion, chopped – 1 large
  • white cabbage, shredded – 1 lb
  • potatoes, diced – 10 oz
  • carrot, diced – 1 medium
  • beef stock – 6 cups
  • caraway seeds – 1 tsp
  • paprika – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • flat-leaf parsley, chopped – 2 tbsp

Method

1. Heat the oil in a large pot and cook the ground beef until browned and crumbly.
2. Add the onion and cook for 3 minutes more. Then add the cabbage, potatoes, carrot, caraway and paprika.
3. Pour in the stock and bring everything to a boil.
4. Simmer the soup for 25 minutes until the cabbage and potatoes are tender.
5. Season with salt and pepper and finish with parsley.
