German White Bean Soup with Kasseler

White bean soup with Kasseler is a hearty German meal soup in which pulses and smoked meat balance each other beautifully. It is a real comfort bowl for cold days.

Serves: 4 people

Preparation time: 45 min

Ingredients

  • Kasseler, diced – 10 oz
  • onion, chopped – 1
  • carrots, diced – 2
  • celery stalks, diced – 2
  • potato, diced – 9 oz
  • white beans, drained – 18 oz
  • beef stock – 5 1/2 cups
  • marjoram – 1 tsp
  • bay leaf – 1
  • black pepper – 1/2 tsp
  • parsley, chopped – 2 tbsp

Method

1. Brown the Kasseler in a soup pot for 3 minutes.
2. Add the onion, carrot and celery and cook for 4 more minutes.
3. Add the potato, beans, stock, marjoram and bay leaf and simmer gently for 30 minutes.
4. Mash a small portion of the beans so the soup becomes a little heartier.
5. Remove the bay leaf, season with pepper and scatter over the parsley.
