German Potato Salad with Cucumber and Dill

A lighter German-style potato salad with cucumber, dill and a tangy dressing.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Potatoes – 900 g
  • Cucumber – 1/2
  • Dill – 3 tbsp
  • White wine vinegar – 3 tbsp
  • Mild mustard – 1 tbsp
  • Sunflower oil – 2 tbsp
  • Shallot – 1
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Cook the potatoes until tender and let them cool slightly.
STEP 2
Whisk vinegar, mustard, oil and shallot into a dressing.
STEP 3
Add thin cucumber slices and dill.
STEP 4
Fold with the potatoes, season and chill lightly before serving.
