Lentil soup with sausage is a well-known German meal soup with a full, earthy flavour. Lentils, vegetables and sausage make it hearty enough for a complete meal.

Ingredients
- butter – 1 tbsp
- bacon, diced – 4 oz
- onion, chopped – 1 medium
- leek, sliced – 1 large
- brown lentils – 1 1/2 cups
- carrots, diced – 2 medium
- potatoes, diced – 2 medium
- German sausage, sliced – 9 oz
- beef stock – 6 cups
- bay leaf – 1
- parsley, chopped – 2 tbsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Cook the bacon in the pot first, then add the onion and leek and let them soften in the rendered fat.
2. Add the brown lentils, carrot and potato, then stir for 2 minutes so the vegetables pick up flavour.
3. Pour in the stock, add the bay leaf, and simmer until the vegetables are soft and the soup tastes hearty and rounded.
4. Lightly mash part of the soup to thicken it, but keep plenty of texture in the bowl.
5. Add the sliced sausage for the last 8 minutes of cooking, finish with parsley, season well, and serve hot.
