Jerusalem artichokes make this soup gently sweet and nutty. Apple keeps the flavor fresh and chives add a clean finish.

Ingredients
- olive oil – 1 tbsp
- shallot, chopped – 1
- Jerusalem artichokes, peeled and diced – 1 1/2 lb
- apple, peeled and diced – 1
- potato, diced – 1 small
- vegetable stock – 5 cups
- fresh chives, chopped – 2 tbsp
- lemon juice – 1 tsp
- salt – 3/4 tsp
- white pepper – 1/4 tsp
Method
1. Heat the olive oil in a pan and cook the shallot for 3 minutes.
2. Add the Jerusalem artichokes, apple, potato and stock and simmer for 20 minutes until tender.
3. Blend the soup until smooth and stir in the chives and lemon juice.
4. Season with salt and white pepper and serve hot.
