German goulash soup is a rich, spiced meal soup with beef, peppers and potatoes. It is warming, robust and ideal for a cold day.

Ingredients
- beef stew meat – 1 1/2 lb
- onions, chopped – 2 large
- red bell peppers, diced – 2
- garlic, minced – 3 cloves
- paprika – 2 tbsp
- caraway seeds – 1 tsp
- tomato paste – 2 tbsp
- potatoes, diced – 2 medium
- beef stock – 6 cups
- oil – 2 tbsp
- parsley, chopped – 2 tbsp
- salt – 1 tsp
- black pepper – 1/2 tsp
Method
1. Heat the oil in a heavy pot and brown the beef well in batches so it develops a deep colour.
2. Add the onion, peppers and garlic and cook until softened, then stir in the paprika and caraway.
3. Add the tomato paste, potatoes and stock and simmer gently for about 1 hour until the beef is tender.
4. Check the consistency, adding a splash of water if the soup becomes too thick.
5. Finish with parsley and serve hot.
