A quick skillet of shrimp, garlic and broccoli, perfect over rice for a fast gluten-free dinner.

Ingredients
- Olive oil – 1 tbsp
- Shrimp – 500 g
- Broccoli – 400 g
- Garlic – 4 cloves
- Chili flakes – 1/2 tsp
- Lemon – 1
- Cooked rice – 500 g
- Parsley – 1 handful
Method
STEP 1 Blanch the broccoli until just tender.
STEP 2 Sear the shrimp in olive oil, then add garlic and chili flakes.
STEP 3 Toss in the broccoli and lemon juice and warm through.
STEP 4 Serve with rice and parsley.
