Shrimp sizzle briefly in olive oil with plenty of garlic, chili and parsley and make an ideal warm tapas dish.
Serves: 4 people

Ingredients
- raw large shrimp, peeled – 1 1/3 lb
- olive oil – 1/3 cup
- garlic, sliced – 6 cloves
- red pepper flakes – 1/2 tsp
- paprika – 1/2 tsp
- salt – 3/4 tsp
- fresh parsley, chopped – 2 tbsp
- lemon wedges – 1 lemon
Method
1. Pat the shrimp dry and season them with the salt and paprika.
2. Heat the olive oil in a wide skillet over medium heat and cook the garlic for 1 minute without letting it brown.
3. Add the red pepper flakes and shrimp and cook for 2 to 3 minutes per side until just done.
4. Stir in the parsley and take the pan off the heat.
5. Serve right away with lemon wedges and bread for dipping into the oil.
