Garlic mushrooms with sherry

Fast, fragrant and deeply savoury, these mushrooms are a superb warm starter with bread to mop up the juices.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • Chestnut or button mushrooms – 400 g
  • Garlic – 1 clove
  • Olive oil – 2 tbsp
  • Dry sherry – 2 tbsp
  • Parsley – 1 small handful
  • Salt and black pepper – to taste

Method

1. Clean the mushrooms and cut them into quarters if they are large.
2. Fry them over fairly high heat in olive oil so they colour rather than stew.
3. Add the garlic, season lightly and cook for another minute.
4. Splash in the sherry, let it reduce briefly, then stir through the parsley and serve hot with bread.
