Garlic Mushrooms with Parsley

Browned mushrooms cooked with garlic, parsley and a splash of sherry are earthy, juicy and perfect with a piece of bread on the side.

Serves: 6 people

Preparation time: 20 min

Ingredients

  • Button mushrooms – 500 g
  • Garlic – 4 cloves, sliced
  • Olive oil – 3 tbsp
  • Dry sherry – 2 tbsp
  • Flat-leaf parsley – 2 tbsp, chopped
  • Lemon juice – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Brush the mushrooms clean and halve any large ones so everything cooks at the same speed.
STEP 2
Heat the olive oil over medium-high heat and brown the mushrooms well before you stir them too much.
STEP 3
Add the garlic and cook for 30 seconds, then pour in the sherry and let it reduce almost completely.
STEP 4
Turn off the heat and add the parsley and lemon juice.
STEP 5
Season with salt and pepper and serve warm with the pan juices spooned over the top.
