Game stew with regional beer and prunes

A warming game stew with dark beer, juniper berries and prunes.

Serves: 4 people

Preparation time: 120 min

Ingredients

  • venison or wild boar stew meat – 2 lb
  • onions – 3
  • butter – 3 tbsp
  • flour – 1 tbsp
  • dark regional beer – 12 fl oz
  • game stock – 1 cup
  • prunes – 6 oz
  • juniper berries – 6
  • bay leaves – 2
  • thyme – 2 sprigs
  • salt – to taste
  • black pepper – to taste

Method

1. Brown the game meat in butter and set it aside.
2. Cook the onions until soft, then stir in the flour.
3. Return the meat to the pot and add the beer, stock, prunes, juniper, bay and thyme.
4. Cover and simmer gently for 1 1/2 to 2 hours until the meat is tender.
5. Season with salt and pepper and remove the herbs before serving.
6. Serve with croquettes, mashed potatoes or celeriac purée.
