Crisp fried chicken with fragrant galangal crumbs adds savory crunch and instant crowd appeal to any Indonesian spread.

Serves: 4 people

Preparation time: 40 min

Ingredients

  • Chicken drumsticks and thighs – 1 kg
  • Galangal – 60 g
  • Garlic – 4 cloves
  • Coriander powder – 2 tsp
  • Salt – 1 tsp
  • Water – 300 ml
  • Oil – for frying

Method

Blend the galangal and garlic into a coarse paste and mix with coriander, salt and water.
Simmer the chicken in this mixture for 25 minutes until almost cooked.
Lift the chicken out and let it dry briefly while you heat the oil.
Fry the chicken until golden and crisp and serve it with the browned spice crumbs.
