Small festive doughnuts with citrus and a hint of sweetness, fluffy inside and perfect with a dusting of sugar.

Ingredients
- Plain flour – 300 g
- Milk – 180 ml
- Fresh yeast – 15 g
- Sugar – 50 g
- Eggs – 2
- Lemon zest – 1 tsp
- Orange zest – 1 tsp
- Vanilla sugar – 1 sachet
- Rum – 1 tbsp
- Salt – pinch
- Oil for frying – as needed
- Icing sugar – for serving
Method
STEP 1
Mix the yeast with lukewarm milk and a little sugar. Leave it for 10 minutes until foamy.
STEP 2
Combine the flour with the remaining sugar, eggs, citrus zest, vanilla sugar, rum and salt. Add the yeast mixture and stir into a thick batter. Let it rise for 45 minutes.
STEP 3
Heat the oil to 170°C. Drop small spoonfuls of batter into the oil and fry until golden brown on all sides.
STEP 4
Drain on kitchen paper and dust generously with icing sugar before serving.
