These fresh spring rolls are all about contrast: cool prawns, crunchy carrot, mint and coriander in soft rice paper with two easy dipping sauces on the side.

Ingredients
- Fresh spring roll wrappers – 12
- Lettuce – 0.5 head
- Cooked prawns – 250 g
- Mint – 1 bunch
- Coriander – 1 bunch
- Carrot – 1
- Crushed peanuts – 100 g
- Chilli sauce – to serve
- Hoisin sauce – to serve
Method
1. Prepare the lettuce, herbs and carrot so everything is ready to roll.
2. Dip the wrappers briefly in warm water until supple.
3. Layer lettuce, prawns, herbs, carrot and peanuts on each wrapper and roll tightly, folding in the sides as you go.
4. Serve the spring rolls cold or just cool with chilli sauce and hoisin sauce.
