Cider gives this French winter soup a bright, almost fruity note that pairs beautifully with celeriac and leek. The result is a gentle, elegant soup for cold days.

Ingredients
- butter – 2 tbsp
- leeks, sliced – 2 large
- celeriac, diced – 1 lb
- potato, diced – 1 medium
- dry cider – 3/4 cup
- vegetable stock – 4 cups
- heavy cream – 1/3 cup
- fresh thyme – 1 tsp
- salt – 1 tsp
- white pepper – 1/2 tsp
Method
1. Melt the butter in a pot and cook the leeks gently for 4 minutes.
2. Add the celeriac, potato and thyme and stir well.
3. Pour in the cider and stock and simmer the soup for 25 minutes.
4. Blend the soup until smooth and stir in the cream.
5. Season with salt and white pepper and serve hot.
