A classic French potato and leek potage with a buttery taste and a refined finish of cream and parsley.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • butter – 2 tbsp
  • leeks – 2, sliced
  • onion – 1 small, chopped
  • potatoes – 1 lb, diced
  • vegetable stock – 5 cups
  • heavy cream – 1/2 cup
  • parsley – 2 tbsp, chopped
  • salt – to taste
  • white pepper – to taste

Method

Step 1
Melt the butter in a soup pot and cook the leeks and onion over low heat for 5 minutes.

Step 2
Add the potatoes and vegetable stock and simmer for 25 minutes until everything is tender.

Step 3
Blend the soup until smooth and stir in the cream.

Step 4
Season with salt and white pepper.

Step 5
Sprinkle with parsley and serve right away.
