Lentil soup is a rewarding meal soup that feels nourishing and full without becoming complicated. This French version builds on a gentle base of leek, carrot and herbs.

Ingredients
- olive oil – 1 tbsp
- leek, sliced – 1 large
- carrots, diced – 2
- celery stalk, diced – 1
- green lentils – 1 1/4 cups
- vegetable stock – 5 1/2 cups
- tomato paste – 1 tbsp
- bay leaf – 1
- thyme – 1 sprig
- salt – 1 tsp
- black pepper – 1/2 tsp
- flat-leaf parsley, chopped – 2 tbsp
Method
1. Heat the olive oil and cook the leek, carrot and celery for 5 minutes.
2. Stir in the tomato paste, then add the lentils, stock, bay leaf and thyme.
3. Simmer the soup for 30 to 35 minutes until the lentils are tender.
4. Remove the bay leaf and thyme and season with salt and pepper.
5. Finish with parsley and serve as a hearty meal soup.
