A herb broth does not have to be complicated to offer real depth. Celeriac, leek and fresh herbs give this French broth a calm but layered flavour.
Serves: 4 people

Ingredients
- water – 6 cups
- celeriac, diced – 9 oz
- leek, sliced – 1 large
- onion, halved – 1
- carrot, cut into chunks – 1
- bay leaf – 1
- fresh thyme – 2 sprigs
- flat-leaf parsley – 4 sprigs
- salt – 1 tsp
- black peppercorns – 6
Method
1. Place all the ingredients in a large saucepan and bring everything slowly to the boil.
2. Let the broth simmer very gently for 35 minutes.
3. Strain the broth carefully so it stays nice and clear.
4. Taste and add a little more salt if needed.
5. Serve the broth hot as a light clear soup or use it as a base for a meal.
