French garlic soup is surprisingly gentle in flavour and far more elegant than its name suggests. Egg yolks and cream make the broth rich and velvety.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • butter – 2 tbsp
  • garlic, minced – 8 cloves
  • flour – 2 tbsp
  • chicken stock – 5 cups
  • egg yolks – 2
  • heavy cream – 1/3 cup
  • thyme – 1 tsp
  • baguette – 6 slices
  • Gruyère, grated – 1/2 cup
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Method

1. Melt the butter in a saucepan and cook the garlic gently for 2 to 3 minutes without letting it brown.
2. Add the flour, stir well, and pour in the stock little by little to keep the soup smooth.
3. Simmer for 10 minutes, then whisk in the egg yolks and cream off the heat.
4. Return the soup to very low heat just to warm it through and season with salt, pepper and thyme.
5. Serve with toasted bread and grated cheese if you like.
