French fennel soup with orange and saffron

Fennel, orange and saffron make a refined vegan soup with a southern French feel. The result is aromatic and elegant, yet still easy to serve.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • olive oil – 1 tbsp
  • fennel bulbs, sliced – 2
  • shallot, chopped – 1
  • potato, diced – 1 small
  • vegetable stock – 4 1/2 cups
  • orange zest – 1 tsp
  • orange juice – 2 tbsp
  • saffron threads – 1 pinch
  • oat cream – 1/2 cup
  • salt – 3/4 tsp
  • white pepper – 1/4 tsp

Method

1. Heat the olive oil in a pan and cook the fennel and shallot for 6 minutes until fragrant.
2. Add the potato, stock, orange zest and saffron and simmer for 18 minutes.
3. Blend the soup until smooth, then stir in the orange juice and oat cream.
4. Season with salt and white pepper and serve hot.
