This light French pea soup is bright green and fresh from mint and crème fraîche. It comes together quickly and works equally well for lunch or as a refined starter.
Serves: 4 people

Ingredients
- butter – 1 1/2 tbsp
- shallots, minced – 2
- frozen peas – 1 lb
- potato, diced – 5 oz
- vegetable stock – 4 cups
- crème fraîche – 1/2 cup
- fresh mint, chopped – 2 tbsp
- lemon juice – 1 tbsp
- salt – 3/4 tsp
- white pepper – 1/4 tsp
Method
1. Melt the butter and cook the shallots gently for 2 minutes.
2. Add the peas and potato and stir well to coat everything.
3. Pour in the stock and simmer for 15 minutes until the potato is soft.
4. Blend the soup smooth, then stir in the crème fraîche, mint and lemon juice.
5. Season with salt and white pepper and serve right away.
