Chestnuts make this French winter soup velvety and gently sweet, while mushrooms add depth. It is a festive soup that still feels wonderfully homely.

Ingredients
- butter – 2 tbsp
- shallots, chopped – 2
- cooked chestnuts, peeled – 10 oz
- mixed mushrooms, sliced – 9 oz
- potato, diced – 1 medium
- vegetable stock – 4 cups
- heavy cream – 1/2 cup
- fresh thyme – 1 tsp
- salt – 1 tsp
- black pepper – 1/2 tsp
- flat-leaf parsley, chopped – 2 tbsp
Method
1. Melt the butter in a pot and cook the shallots for 3 minutes.
2. Add the chestnuts, mushrooms, potato and thyme and cook for 5 minutes.
3. Pour in the stock and simmer for 20 minutes.
4. Blend the soup until smooth and stir in the cream.
5. Season with salt and pepper and finish with parsley.
