French celery cream soup with apple

This French celery soup gets extra freshness from apple while staying elegantly creamy.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • butter – 2 tbsp
  • onion – 1 large, chopped
  • celery stalks – 6, cut into pieces
  • apple – 1, diced
  • potato – 1 medium, diced
  • vegetable stock – 5 cups
  • heavy cream – 1/2 cup
  • salt – to taste
  • white pepper – to taste
  • parsley – 2 tbsp, finely chopped

Method

Step 1
Melt the butter in a soup pot and cook the onion for 4 minutes. Add the celery, apple, and potato and cook for 3 more minutes.

Step 2
Pour in the vegetable stock and simmer for 25 minutes.

Step 3
Blend the soup until completely smooth and stir in the cream.

Step 4
Season with salt and white pepper.

Step 5
Sprinkle with parsley and serve.
