Potage Crécy is a classic French carrot soup with an elegant, silky texture and a touch of butter.
Serves: 4 people
Preparation time: 30 min
Ingredients
- butter – 2 tbsp
- onion – 1 large, chopped
- carrots – 1 1/2 lb, sliced
- potato – 1 medium, diced
- vegetable stock – 5 cups
- heavy cream – 1/3 cup
- salt – to taste
- white pepper – to taste
- chives – 2 tbsp, finely chopped
Method
Step 1
Melt the butter in a soup pot and cook the onion for 4 minutes. Add the carrots and potato and stir well.
Step 2
Pour in the vegetable stock and simmer the soup for 25 minutes until the vegetables are tender.
Step 3
Blend the soup until very smooth and stir in the cream.
Step 4
Season with salt and white pepper.
Step 5
Finish with chives and serve warm.
