French cabbage soup is an honest country-style soup made with cabbage, potato and a little bacon. It is simple, nourishing and especially good in cool weather.

Ingredients
- bacon, diced – 4 oz
- onion, chopped – 1 medium
- leek, sliced – 1 large
- carrot, diced – 1 medium
- green cabbage, shredded – 5 cups
- potatoes, diced – 2 medium
- beef stock – 6 cups
- bouquet garni – 1
- heavy cream – 1/4 cup
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Cook the bacon in a soup pot until lightly crisp, then add the onion, leek and carrot and let them soften.
2. Stir in the cabbage and potato and cook for 2 minutes.
3. Pour in the stock, add the bouquet garni, and simmer until the vegetables are tender.
4. Remove the herbs, season the soup generously, and add a splash of cream if you want a softer finish.
5. Serve hot with rustic bread.
