Franconian Potato Salad with Radish

A fresh Franconian-style potato salad with radish, chives and a broth dressing.

Serves: 4 people

Preparation time: 20 min

Ingredients

  • Potatoes – 850 g
  • Radishes – 1 bunch
  • Vegetable stock – 180 ml
  • White wine vinegar – 3 tbsp
  • Mild mustard – 1 tbsp
  • Sunflower oil – 2 tbsp
  • Chives – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Cook the potatoes and slice them.
STEP 2
Warm the stock with vinegar and mustard, then pour over the potatoes.
STEP 3
Add sliced radishes, oil and chives.
STEP 4
Season and let stand for 15 minutes before serving.
