Flemish buttermilk soup with potato and chives

Flemish buttermilk soup is gently tangy, surprisingly mellow and deeply traditional in character. Potato gives it body, while chives and butter add a soft finish.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • potatoes, diced – 14 oz
  • small onion, chopped – 1
  • butter – 2 tbsp
  • vegetable stock – 3 cups
  • buttermilk – 2 cups
  • heavy cream – 1/2 cup
  • flour – 1 tbsp
  • chives, chopped – 3 tbsp
  • salt – to taste
  • white pepper – 1/4 tsp

Method

1. Cook the onion in the butter until soft. Add the potatoes, pour in the stock and simmer for 20 minutes until the potatoes are tender.
2. Whisk the buttermilk, cream and flour together in a bowl until smooth. Blend the soup and reduce the heat.
3. Pour the buttermilk mixture into the pot while stirring and heat the soup gently without letting it boil. Add the white pepper.
4. Season with salt to taste and finish with the chives. Serve warm rather than boiling hot.
