Dark beer, slow-cooked beef and a bowl of crisp fries on the side: this is Belgian comfort food at its richest and most pub-worthy.

Ingredients
- Beef chuck, cubed – 1 kg
- Onions, sliced – 3
- Dark Belgian beer – 330 ml
- Beef stock – 300 ml
- Mustard – 1 tbsp
- Brown sugar – 1 tbsp
- Thyme – 1 tsp
- Bread slice – 1
- Vinegar – 1 tbsp
- Fries – 800 g
- Butter – 30 g
Method
Brown the beef well in butter. Add the onions and cook until soft, then add beer, stock, mustard, sugar, thyme and vinegar. Spread mustard on the bread and lay it on top of the stew. Simmer slowly until the meat is very tender and the sauce dark and glossy. Serve with hot fries.
