A quick flatbread version of Alsatian-German flammkuchen with crème fraîche, onion and bacon.
Serves: 2 people
Preparation time: 15 min
Ingredients
- flatbreads – 2
- crème fraîche – 100 g
- bacon lardons – 100 g
- red onion – 1
- black pepper – to taste
Method
STEP 1
Heat the oven as high as it will safely go and place a baking tray in it so the base starts cooking the moment it goes in.
STEP 2
Spread the flatbreads thinly with crème fraîche, leaving a small border. Scatter over the onion and bacon. Keep the topping light, because flammkuchen should stay crisp rather than heavy and soggy.
STEP 3
Season with black pepper and slide the flatbreads onto the hot tray.
STEP 4
Bake until the edges are deeply golden and the bacon is cooked, usually just a few minutes in a hot oven. Slice and serve straight away.
