A creamy pie filled with tender fish under a fluffy mash lid: seaside comfort dressed in pub clothes.

Serves: 4 people

Preparation time: 50 min

Ingredients

  • Mixed white fish and salmon – 800 g
  • Leek, sliced – 1
  • Butter – 40 g
  • Flour – 40 g
  • Milk – 400 ml
  • Peas – 120 g
  • Dill – 2 tbsp
  • Potatoes – 1 kg
  • Cheddar – 75 g
  • Salt and pepper – to taste

Method

Poach or steam the fish briefly and flake into chunks. Soften the leek in butter, stir in the flour, then add milk to make a sauce. Add peas and dill, then fold in the fish. Spoon into a baking dish, top with mashed potatoes and cheddar, and bake until bubbling and golden.
