Lohikeitto is a classic Finnish salmon soup with potatoes, leeks and dill in a creamy broth. The flavor is gentle, fresh and deeply comforting.

Ingredients
- skinless salmon fillet, cubed – 1.1 lb
- potatoes, diced – 1.1 lb
- large leek, halved and sliced – 1
- carrot, thinly sliced – 1
- fish stock – 5 cups
- heavy cream – 3/4 cup
- butter – 2 tbsp
- fresh dill, chopped – 3/4 cup
- bay leaf – 1
- salt – 1 tsp
- white pepper – 1/2 tsp
Method
1. Melt the butter in a pot and soften the leek and carrot for 3 minutes without letting them color.
2. Add the potatoes, bay leaf and stock. Simmer for 12 to 15 minutes until the potatoes are almost tender.
3. Slip the salmon into the soup and poach gently for 4 minutes.
4. Stir in the cream and most of the dill and warm through for 2 minutes without boiling hard.
5. Season with salt and white pepper and serve with the remaining dill on top.
