A Finnish mushroom soup can be simple yet full-flavored thanks to butter, stock and cream. Dill adds just enough freshness to lighten the whole bowl.
Serves: 4 people

Ingredients
- cremini mushrooms, sliced – 1.1 lb
- onion, finely chopped – 1
- butter – 2 tbsp
- vegetable stock – 4 cups
- flour – 2 tbsp
- heavy cream – 3/4 cup
- dill, chopped – 2 tbsp
- salt – 1 tsp
- white pepper – 1/2 tsp
Method
1. Melt the butter and soften the onion for 3 minutes. Add the mushrooms and cook for 6 minutes until well reduced.
2. Sprinkle over the flour and stir well. Pour in the stock and simmer for 10 minutes.
3. Briefly blend about half of the soup so it becomes creamy while still keeping texture.
4. Stir in the cream and dill and warm through for 2 minutes.
5. Season with salt and white pepper and serve immediately.
