Sweet dates, salty feta and soft spinach tucked into crisp pastry make these little parcels ideal as a warm starter or part of a mezze table.

Ingredients
- Spinach – 250 g
- Onion – 1
- Garlic – 1 clove
- Dates – 100 g
- Feta – 150 g
- Filo pastry – 6 sheets
- Egg – 1
- Olive oil – 2 tbsp
- Parsley or mint – 2 tbsp
- Salt – to taste
- Black pepper – to taste
Method
1. Wilt the spinach, then cook the onion and garlic gently and combine everything with chopped dates, feta and herbs.
2. Season the filling and let it cool so the pastry stays crisp later on.
3. Cut the filo into strips, fill and fold into triangles or small parcels, brushing the pastry lightly with oil or egg.
4. Bake until crisp and golden and serve warm.
