These festive sausage rolls are a slightly more grown-up version of the classic party snack, but they still work very well on family celebrations where children and adults eat together. The spiced filling and crisp pastry make them especially good when you want the food table to feel a little more special.

Ingredients
- Smoked almonds – 100 g
- Garlic – 1 clove
- Veal mince – 500 g
- Fig jam – 100 g
- Breadcrumbs – 75 g
- Milk – 2 tbsp
- Ras el hanout – 1 tsp
- Salt – 1/2 tsp
- Black pepper – 1 tsp
- Filo pastry – 1 pack
- Egg – 1
- Cream – splash
- Sesame seeds – 2 tbsp mixed black and white
Method
step 1
Chop the almonds finely and mix them with the mince, garlic, fig jam, breadcrumbs, milk, ras el hanout, salt and pepper. The result is savoury, slightly sweet and very aromatic.

Lay out the filo pastry and keep it covered so it does not dry out. Add small rolls of filling and fold the pastry around them tightly.

Brush the tops with beaten egg mixed with a little cream and scatter over the sesame seeds for colour and crunch.

Bake until crisp and deeply golden. Because the pastry is thin, these are best served fairly soon after baking while they are still flaky.
