Simple, elegant and beautifully balanced, this classic nigiri pairs lightly sweet shrimp with softly seasoned rice and just a touch of wasabi.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Cooked large shrimp – 8
- Wasabi – to taste
Method
Season the rice and let it cool to body temperature. Butterfly the shrimp if needed and pat dry. Shape small ovals of rice with damp hands, add a dab of wasabi, lay a shrimp on top and press gently to form neat nigiri.
