Easy Beef in Black Bean Sauce

This beef stir-fry in black bean sauce is quick, punchy and made for busy evenings. Tender strips of beef, peppers, ginger and garlic come together in a sauce that tastes far more complex than the effort suggests.

Serves: 4 people

Ingredients

  • Rump steak – 450 g, sliced
  • Black bean sauce – 3 tbsp
  • Red bell pepper – 1, sliced
  • Green bell pepper – 1, sliced
  • Spring onions – 4, sliced
  • Garlic – 3 cloves, chopped
  • Ginger – 2 cm, grated
  • Light soy sauce – 1 tbsp
  • Cornflour – 1 tbsp
  • Neutral oil – 2 tbsp
  • Water – 80 ml

Method

1. Toss the beef with the cornflour and soy sauce so the meat gets a light coating.
2. Heat a wok until hot and stir-fry the beef quickly in a little oil, then lift it out once browned.
3. Add the remaining oil with the garlic and ginger and cook just until fragrant.
4. Stir-fry the peppers for a minute or two so they keep some bite, then return the beef to the wok.
5. Add the black bean sauce and water and toss until the sauce coats the meat and vegetables.
6. Finish with spring onions and serve hot with rice or noodles.
