Dutch hachee is a classic beef stew in which onions, spices and slowly cooked meat form a deep gravy.
What is Dutch hachee?
Hachee is a Dutch stew made with beef and plenty of onions. As the onions cook down, they melt into the gravy, making it naturally sweet, savoury and rich.

Ingredients
- beef chuck, cubed – 2 1/4 lb
- onions, sliced – 4 large
- butter – 3 tbsp
- flour – 1 tbsp
- beef broth – 2 cups
- red wine vinegar – 3 tbsp
- bay leaves – 2
- whole cloves – 3
- brown sugar – 1 tbsp
- salt – 1 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Brown the beef all over in 2 tablespoons of butter and sprinkle with the flour.
2. Add the onions and the remaining butter and cook until the onion starts to soften.
3. Pour in the broth and vinegar and add the bay leaves, cloves, sugar, salt and pepper.
4. Bring to a simmer and let the hachee cook gently for 2 hours.
5. Remove the bay leaves and cloves and serve with mashed potatoes or red cabbage.
