Duck and wild mushroom pie

Flaky pastry, savoury duck and earthy mushrooms come together in a pie that feels wonderfully old-fashioned in the best possible way.

Serves: 6 people

Preparation time: 60 min

Ingredients

  • Duck legs, cooked and shredded – 500 g
  • Wild mushrooms – 300 g
  • Onion – 1
  • Garlic – 2 cloves
  • Thyme – 2 sprigs
  • Chicken stock – 250 ml
  • Cream – 100 ml
  • Butter – 1 tbsp
  • Flour – 1 tbsp
  • Puff pastry – 1 sheet
  • Egg – 1

Method

Cook the onion, garlic and mushrooms in butter until reduced and fragrant.
Add flour, then stock and cream to make a rich filling sauce. Stir in the duck and thyme.
Transfer to a pie dish, top with puff pastry and brush with beaten egg.
Bake until the pastry is puffed and deep golden. Let it settle briefly before serving.
